Date and Molasses Flapjacks


Satisfying and easy to make flapjacks.The molasses provides extra minerals and a wonderfully rich flavour.

You will need
100g chopped dates100ml boiling water50g coconut butter1½ tablespoons molasses150g oat flakes25g sunflower seeds
Here's how
Place the dates and boiling water in a saucepan and simmer for 1- 2 minutes, stirring occasionally - until the water is absorbed and the dates resemble a pasteAdd the coconut butter and molasses and gently heat and mix thoroughly.Remove from the heat and add the oats and sunflower seeds, stirring well to combineTransfer to a 7" square lined tin and cook at 200oc for 20 minutes until the top is brownedCut into squares but leave the mixture to cool in the tin  Transfer to a tin and they will keep a good 5 days
